10 Minute Shrimp Pasta With Peppers, Lemon and Spinach
I absolutely love this recipe, it is very light and flavorful. Perfect for a lunch that you don’t want to take a nap after… I made this one afternoon when I was just cooking for one and it was so yummy, I put it on my list of go-to quick lunches. It takes about 10 minutes from start to finish, no one (that I know anyway) is too busy for a great tasting 10 minute lunch, so lets cook!
Here is what you will need to put it together (Serves 2)
1/2 lb. Large or Extra Large Shrimp
1/3 box Angel Hair Pasta
1 Lemon, juice and zest
1 Cup Frozen Chopped Spinach
1 Red Bell Pepper
3 Cloves Garlic, minced
1/2 tsp Red Pepper Flakes
1 tsp. Italian seasoning mix
Salt and Pepper
1 T. Olive Oil
Ok, First, fill up your pasta pot with salted water and heat it up. Cook Pasta according to package directions, usually 4 minutes after the water starts to boil.
While the Pasta is cooking, we can get the rest of the meal together. Place your shrimp on a plate and season with salt, pepper, italian seasoning. half of the lemon zest and red pepper flakes. Let that hang out while the peppers are going.
Next, heat the olive oil in a saute pan, then add the red bell peppers and cook for about 5 minutes. After 5 minutes, add the garlic and saute for another 1-2 minutes, just until the garlic is fragrant.
Then add the shrimp and the spinach. Layer the shrimp in the pan and cook for 2 minutes, then flip and cook for another 1.5 minutes.
Now all you do is add a little of the starchy cooking water from the pasta and squeeze the juice of 1 lemon into the pan. Then drain your pasta and add it to the shrimp mixture and toss it a little to coat all of the yummy pasta. Top it off with the rest of your lemon zest, and of course a little freshly grated parmesan.
Done, lunchtime in 10 minutes flat!
